The cooked agave are milled by hand with mallets, and its double distilled in copper alembic stills. Notes include white pepper, marzipan, vanilla, wood and spice on the nose. Wood and spice notes continue on the palate, with leafy and wet stone notes, leading into a spicy, peppery, minerally finish.
